How This Iceland Wedding Proved Love Can Be Carbon-Neutral, Vegan, and Totally Gorgeous

VegNews describes an Iceland wedding featuring glacier vows, black dresses, carbon offsets and a vegan cinnamon roll cake, showcasing a carbon-neutral celebration.

Bishal Dutta and Emelyne DePue married in Iceland after four and a half years of long-distance love. Their carbon-neutral celebration featured glacier vows, a vegan feast, and a cinnamon roll cake. The couple worked with Pink Iceland, an LGBTQ+-owned travel company that centres sustainability, local sourcing, and human rights. Pink Iceland offsets the carbon footprint of every wedding it plans. The pair said the company aligned with their values from the start. On the ceremony morning the couple and nine loved ones shared a picnic at a private waterfall. They ate cinnamon rolls, carrot-potato-leek soup, hot chocolate, and mimosas. A vegan officiant led the vows at the base of a glacial valley. Afterwards the newlyweds hiked up the glacier for photos in special gear. The reception took place at a modern lodge. Guests dined on a fully vegan menu that began with warm bread and herbaceous vegan pesto. Starters included a silky mushroom purée with asparagus, Jerusalem artichoke, eggplant, and pickled enoki mushrooms, followed by creamy chickpea spread with crispy cauliflower and seasonal crudités. The main course was a hearty vegan Wellington with sweet potato purée and roasted root vegetables. Dessert offered sorbet, fruit crumble, and apple gel. The couple cut a cinnamon roll-inspired wedding cake layered with warm spice. Emelyne wore a black Essense of Australia gown from a Louisville boutique. Bishal wore a burgundy-purple suit. Later Emelyne changed into a second dress honouring her mother’s 1990s bridal look. Bishal switched to a blue suit gifted by his father. The multi-day celebration included plant-based meals at local restaurants. Emelyne said the most important part of a wedding is the connection to family.
