The Every Company wins US patent for finished foods with fermented egg whites
Precision fermentation company The Every Company has secured a new US patent covering finished food products made with recombinant ovalbumin. The intellectual property protects foods utilizing animal free egg white proteins.
US precision fermentation company The EVERY Company has been granted US Patent No. 12,767,701, which covers finished food products made with recombinant ovalbumin. According to the company, it is EVERY’s 65th granted patent worldwide. Ovalbumin makes up more than half of the protein in egg white and provides most of its foaming, binding and gelling properties. EVERY’s earlier ovalbumin patents, US 12,096,784 and European patent 4017287, protect the ingredient itself. The new patent covers the foods made with it, including baked goods, which EVERY describes as its core market, and processed food products. The patent claims cover recombinant ovalbumin produced in three industrial host organisms: the yeast Pichia pastoris and the fungi Trichoderma reesei and Aspergillus niger. They also cover combinations of recombinant ovalbumin with other egg proteins and food ingredients. The patent also protects formulations in which the fermented protein performs as well as or better than conventional egg white in gelling, whipping, emulsification, foam stability, humectancy and browning. A further set of claims applies to powdered egg white compositions designed to match the animal-derived product in consistency, taste, appearance and shelf stability, with low fat and higher protein density. The grant comes after a year of commercial scale-up for OvoPro, EVERY’s ovalbumin ingredient. In June, the company and Bulgarian pharmaceutical group Huvepharma agreed to quadruple OvoPro production capacity. In July, EVERY signed a deal with ADM to manufacture OvoPro at commercial scale in Clinton, Iowa, which will move part of its production to the US. EVERY also reports completing a nationwide rollout at US retailer Walmart this year. According to EVERY, its patent portfolio now spans strain engineering, downstream processing, ovalbumin production and end-use applications. Co-founder and CEO Arturo Elizondo stated, “Securing our 65th granted patent globally is a powerful validation of a decade of relentless innovation and scientific leadership. As precision fermentation transitions into mass-market adoption, building a deep IP portfolio is critical for establishing long-term commercial value and protecting our market leadership. This foundational patent further reinforces our leadership, providing our commercial partners and prospective investors with unparalleled confidence in EVERY’s proprietary position.” Thank you!
